Chocolate-Covered Banana Bites
Ingredients:
2 cups chocolate chips (semi sweet)
2 tablespoons of coconut oil
2 tablespoons smooth peanut butter
2 large pinches of sea salt + extra for sprinkling
4 bananas that aren't over-ripe
1/2 cup chopped almonds
Way to make:
1.Take 2 large plates with aluminum foil and clear some room in your freezer.
2.Place the 2 cups of chocolate chips in a microwave safe bowl. Microwave the chocolate for 30 seconds.
3.Later add the coconut oil and the peanut butter and microwave for 30 more seconds.
4.Stir with a spoon and make sure that everything is melted and creamy. If you still find a few stubborn chips, wait a few seconds and see if the residual heat melts them.Then, add salt.
5.Place the chocolate mixture over the bananas and gently stir until the bananas are coated.
6.Once the bananas are coated in the chocolate, gently place them on your two foil-lined plates so they're not touching. Sprinkle with more sea salt, granulated sugar, and the chopped almonds.
7.Let the bananas freeze for at least 3 hours prior to serving.
